I’m on team mix-it-up when it comes to classic summer cocktails like mojitos. I love experimenting by playing around with the ingredients and flavors, or jazzing them up with seasonal fruit. And what fruit could possibly be more synonymous with summer than watermelon? Juicy, sweet, and healthy, watermelon is one of those ingredients I simply can’t get enough of. I love using watermelon in dishes such as salads with feta, black olives, and green onions, but they’re most refreshing when enjoyed in large wedges with nothing more than a twist of lime—a seasonal delight which inspired me to create this refreshing cocktail.

With its sweet yet tangy taste and thirst-quenching flavors, this watermelon mojito recipe is going to hit the spot on a scorching summer day. It’s the ultimate way to ring in the weekend, but also a fine drink to serve during your next alfresco dinner party or impromptu barbecue.

Is This Watermelon Mojito Healthy?

Sure, the recipe calls for healthy and hydrating watermelon, but is it healthy? Let’s be realistic—a recipe that includes alcohol and a sugar syrup will not be trumping the list of healthiest foods. No need to outline the reasons why alcohol should be consumed in moderation here. I’m sure we’re all aware of them, so sip it slowly and enjoy the experience without overindulging!

Replacing The Rum

Though the classic mojito recipe calls for white rum, don’t hesitate to try this watermelon mojito recipe with other spirits such as vodka, gin, tequila, or even whiskey. And how about giving your mojito a unique twist by making it with aguardiente or absinthe? Both will add aromatic notes of anise to the drink, but the absinthe will give your mojito a lovely, subtle green hue. To make a virgin watermelon mojito, simply leave out the alcohol.

Watermelon Mojito

Ingredients

  • 1 large lime cut into 8 segments
  • 20 mint leaves
  • 2 ounces simple syrup (or to taste)
  • 1/2 cup watermelon diced
  • 3 ounces white rum
  • Club soda to top it off
  • Ice for servings

Instructions

  • Divide the lime segments and mint leaves between two highball glasses. Use a muddler to muddle until the limes and mint break down and release their flavors.
  • Divide the syrup and watermelon between both glasses and muddle again.
  • Divide the rum between both glasses, add a few ice cubes and top if off with the club soda. Stir and sip!
